I make this recipe using my rice cooker that simultaneously steams the sweet potato. Alternatively, you can make the rice according to package instructions in a regular saucepan. Then steam the sweet potato separately, and finally mix together.
Ingredients:
1 cup Black Rice (aka Forbidden Rice- available at Whole Foods and other specialty stores)
1 ¾ cup water
1-2 sweet potatoes, peeled and cut into ½-inch cubes
1 Tbsp. Nature’s Promise Thai Peanut & Honey Dressing (or any thai or miso dressing of your choice)
¼ cup dried cranberries
¼ cup roasted unsalted cashews, chopped
3 green onions (include 2-3 inches of green), chopped (optional)
Directions:
Add the rice and water to your rice cooker. Stir to combine. Before turning on your rice cooker, fill the steamer basket with the sweet potato cubes. Place the basket on top of the rice cooker, followed by the lid. Plug the rice cooker in and then press COOK.
Depending on how much sweet potato you have, it may be done before the rice finishes. If so, just keep an eye on your sweet potato- you don’t want it too mushy.
Once everything is done, put the black rice in a bowl and add the dressing. Stir to combine. Then, add in your sweet potato, cranberries, and cashews. Gently toss together. Serve or place in an airtight container for meal prep
